Mexican Slaw Gone Bad

Picked up a recipe from the newspaper (in the break room at my work of all places) the other day that I wanted to try.
Whole Foods’ Mexican slaw
> green cabbage
> jicama
> carrots
> red bell peppers
> red onion
> jalapeno pepper
> lemon juice
> salad oil
> cilantro
> salt and pepper
Sounded good, so I decided to make it yesterday.
First, I started peeling and chopping (cutting whole cabbage stinks BTW) and preparing all the ingredients.
The next step is where it all went bad. I was only supposed to use one jalapeno but I decided to use two (no big deal, they won’t have the seeds).
As I was removing the seeds of the jalapenos with my HANDS, I began to have an itch near my eye. See where this is going?
I quickly washed my hands of all the jalapeno seeds and lime juice and rubbed my eye. Oh crap….that made it worse!
Washed my hands again and then tried to wash my eyes out with water (with my hands). Holy crap….my eyes are burning bad. They are on fire!
Tried to use some kleenex, a towel, more water, but nothing was working. My eyes were as red as I have ever seen them before and watering so much that one of them closed for a second.
You know when your skinned gets burned and it feels like heat is coming off your skin? That was what my eyes felt like.
Thankfully, the pain stopped and my eyes calmed down. But I wasn’t touching that slaw again, let alone taste it. Funny thing is, my wife liked it (after she took the jalapenos out).
I did finally try it later on after work (it still had a lot of kick even without the seeds).
Yum.
Anybody need to make some homemade pepper spray for your protection during the holiday season of shopping?

You need a processor to mix all this so you don’t have to handle any of it. May have to adjust your Christmas List. :=]]]

You need to stick to the recipe and only use one!…..what are you trying to do? Kill me or something. At least they were big pieces and I could easily pick them out.
NOTE TO SELF: Do not take seeds out with bare fingers, use utensil instead.
